So how do you create these wonderful cookies?

Here are the ingredients you will need (makes 24 cookies):

  • 1 stick of butter at room temperature
  • 1/4 Cup of sugar
  • 1 egg
  • 1 2/3 cups all-purpose flour
  • 1 tablespoon ground almonds

To Decorate you will need:

  • 1/3 cup confectioners’ sugar
  • 2 teaspoons lemon juice
  • Granulated or sanding sugar, for sprinkling
  • Edible glitter or sprinkles (optional)

Materials:

  • 3 inch dove cookie cutter
  • 2 baking sheets, greased

In a large mixing bowl, beat together the butter and sugar until pale and creamy. Beat in the egg, then sift the flour and almonds over the mixture and fold in. Knead gently to make a soft dough, then press into a ball, wrap in plastic wrap, and chill for about 1 hour.

Preheat the oven to 350F.

Roll out the dough on a light floured surface to about 1/8th inch thick and stamp out doves using the cookie cutter. Place the doves on the prepared baking sheets and bake in the preheated oven for about 10 minutes until the cookies are pale golden brown. Leave to cool for a couple of minutes on the baking sheets, then transfer the cookies to a wire rack to cool completely.

To decorate, mix together teh confectioners’ sugar and lemon juice until smooth. Brush a thin layer of the mixture over a cookie with a pastry brush and sprinkle generously with sugar. Repeat with the remaining cookies. When dry, shake off the excess sugar and sprinkle over a small amount of edible glitter or some sprinkles, if using.

Store the cookies in an airtight container until required. These can be made up to four days before your baby shower.
